Buckeye Cake


A buckeye candy is made to look like a buckeye nut, and is comprised of peanut butter dipped in chocolate. A buckeye cake does not look like a buckeye nut, but is damn tasty. This is not something for those who do not like chocolate, peanut butter, or rich desserts.


Ingredients:
1 box commercial chocolate cake mix
1 tub commercial chocolate icing
2 cups granulated sugar
2/3 cup milk
1 cup marshmallow creme
1 cup creamy peanut butter
1 teaspoon vanilla extract

Directions:
The cake—
  1. Follow manufacturer's instructions on box for making the cake. Note that you should end up with two separate cakes.
  2. Set cakes aside and allow to cool.
The peanut butter fudge—

  1. Boil sugar and milk in a medium saucepan, stirring occasionally to soft ball stage or about 236 degrees F on a candy thermometer.
  2. Remove mixture from heat and stir in remaining ingredients.
  3. Pour candy into a greased round pan the same size as used for the cakes. Chill.
Putting the two together—
  1. After the cakes and the fudge are cooled, remove all three from their pans and place on cake platter. The fudge goes between the two layers of cake.
  2. Ice the cake completely.
  3. If there are any crumbs left over from the fudge, sprinkle these on top of the cake.
  4. Serve and enjoy! Note that you will likely want a large glass of milk or other liquid.
